Hi there and welcome to my virtual kitchen.  Here I will be sharing with you some of my family's favorite dishes.  You'll have to bear with me as often I do not use recipes.  I am one of those people that  just cook.  I get teased a lot here at home because my husband says I never make the same exact thing twice.  So I am going to try to actually write something down.  Just remember at times you will have to flavor things to your taste.  I am just starting out so I will just list a few and try to rate them to how hard or easy they are to make.   As I get more time this page will just be the starting point and I will add links to different categories of food.  Happy baking!!

Michigan Pasties
(very easy to make)
1 recipe of 2-crust pie crust
5 potatoes
1 onion
1 cup rutabaga
1 lb beef or pork diced
1/4 cup butter

Roll dough into four thin circles arrang ingredients over 1/2 of each circle. Dot with butter and salt and pepper to taste.  Garlic may also be added.  Fold dough over the filling and pinch and roll along edges.  Poke a few holes in top with a fork.  Place on baking sheet and bake in 400 degree;oven for 45 minutes or until top is golden brown.  These freeze really well for a quick lunch.  Serves four.


Texas Sheet Cake
(not quite as easy, but fast cooking)
2 sticks butter        1/4 cup cocoa
2 cups sugar          2 cups flour
     2 eggs                    1/2 cup buttermilk
3/4 tsp salt                1 tsp soda
1 tsp vanilla        1 stick butter
1/4 cup cocoa        6 tsp milk
1 16 oz package of confectionery sugar
1 tsp vanilla
for cake:
Combine 2 sticks butter, 1/4 c cocoa, and 1 c water in a pan.  Bring to a boil; remove from heat.  Add sugar, flour, salt; mix well. Combine eggs with buttermilk, soda, and 1 tsp vanilla, mix well and add to cocoa mix; mix well.  Grease and flour 10 x 15 inch pan.  Pour ingredients in and bake at 350 degrees for 20 minutes.
for icing:
Bring 1 stick butter, 1/4 c cocoa, and milk to a boil in a saucepan.  Remove from heat.  Beat in confectionery sugar and 1 tsp vanilla until smooth.  Pour over hot cake.


Mom's Chocolate Pound Cake
(very easy to make)
When I was in school, my mom would often make this cake and serve
it hot to me when I walked in from school. What a special treat!
1 cup butter
1/2 cup shortening
3 cups sugar
5 eggs
1 teaspoon vanilla
3 cups flour
1/2 cup cocoa
1 teaspoon baking power
31/2 teaspoon salt
1 cup half and half

Preheat oven to 325 degrees
In a mixing bowl cream butter, shortening, and sugar. When well creamed, add eggs in one at a time.
Add vanilla.

In another bowl, mix dry ingredients.
Add dry ingredients to mixer alternating with half and half.
Pour into a greased bundt pan.
Bake for 90 minutes. Test the cake every 5 minutes from the 85 minutes mark.
(I do this using a clean broom straw-if it comes out clean it's done. If cakes sticks to the straw then continue baking another 5 minutes.
Cool for 10 minutes before inverting onto a plate.


Crab Alfredo-Junie style
(easy to make and less fattening than traditional stuff)
(this is my own concocion)
8 oz pkg of cream cheese (not no-fat)
1 pkg of imitation crab meat
1 stick of butter
1 cup of milk
parmesaen cheese at least 1 cup
1 clove of garlic+
salt, red pepper, and paprika
Start by melting your butter on low in a sauce pan.  Add garlic clove and saute until softened.  Add cream cheese, stirring frequently until melted.  Very slowly add milk, avoiding clumping.  Add salt, pepper, and paprika to taste.  After everything is mixed smoothly (note it will be a little runny yet), add imitation crab meat.  You may also add small shrimp to this and canned crab.  Mix until well heated.  In another pan, bring water to a boil and cook spagetti or fettichine.  When you are about ready to serve add the parmesaen until you get the desired thickness of your sauce.


Junie's Greek Salad
(very easy to make)
I used some iceberg lettuce with a variety of other greens-
whatever is available in your region.
after lining the bottom of the salad bowl with lettuce I add in order:
1 pkg feta cheese, crumbled
1 small can of sliced olives
1/2 stick of pepperoni, cubed
a few sprouts
sprinkle heavily with parmesaen
pour 1 jar of Christie,s Greek Dressing over the top-
letting it marinate for about 15 minutes
just before serving I add croutons to the top


Junie's Cheese Garlic Grits
     (fairly easy as long as you stir often)
                                   1 cup Quick grits
                                   4 cups Water, boiling
                                   4 tsp Butter
                                   12 oz very sharp cheddar cheese
                                   1 Egg, beaten
                                   1 garlic clove
                                   3/4 cup Milk
                               I add salt,  paprika, and red pepper to taste.

Bring water to boil in a 2 quart pot.  Slowly add grits, stirring so they don't get

sticky.  After one minute they should be cooked.  Set the heat on low now and add all other ingredients slowly, stirring them in.  Let this cook on low for 15-20 minutes.  Note the flavor of this will increase the longer it sets.  Left-over are awesome!!
